Rare cooked tuna sprinkled with balsamic vinegar wrapped in steamed leafy greens (collards) + salad: thinly sliced fennel, cherry tomatoes, pickled beets, raw enoki mushrooms, olive oil, flax seeds + lightly sautéed enoki mushrooms with olive oil and garlic + a glass of red wine
